Darren Goodwin will show you through the course of preparing this 3 course tasting menu how aspiring cooks and chefs can take their food to the next level using a range of simple & innovative cookery techniques. Learn how you build up plates of food and flavours to create a series of show stopping dishes. Darren will unleash the "Heston' in you allowing you to create stunning looking plates of food at home or in a professional kitchen.
This full day course includes both "hands on" cooking and a number of elements demo-ed by Darren.
The beauty of Darren's menus are that the dishes are not as they seem...It is all about the art of surprise!
At the end of the day you will take home the following 3 course show stopping menu:
Starter Course
- Bread making
- Creating your own vegetarian jelly
- Making your own cheese mousse
Main Course
Poached plaice ++ with a crab bisque ++ compressed cucumbersalad
KEY TECHNIQUES
- Filleting and preparing a flat fish
- How to poach a fish
- How to prepare a base sauce from shellfish
- Using a vacuum to compress a cucumber
Desert Course
Baked goats curd cheesecake ++ strawberry sorbet pimms granita ++ pimms jelly ++ strawberry bubble
