This is a cookery course for people who love to eat fish but are a little daunted by how to prepare and cook it. This course is led by Stephanie who has gained a well earned reputation on programmes such as the Great British Menu for her innovative and modern approach to all aspects of cookery.

Following her recent "sell out" course with us Steph has come up with all NEW recipes for our second Fish Masterclass.
Steph started her career at The Dorchester on Park Lane in London working for Anton Mosimann, and her tv appearances have included “The Great British Menu" and "Put Your Money Where You Menu Is"
Steph is passionate about promoting the use of British fish and also enjoys using local produce in her cooking.
This is the ideal course for people who love eating fish but are unsure how to prepare fresh raw fish and transform it into great tasting meals.
During this full day "hands on" course you will learn the knife skills needed to fillet fish as well as a number of other technique based skills such as how to pin bone fish, how to skin fish and how to prepare your fish for baking.
Working alongside Steph you will create a series of fabulous dishes to take home and share with family and friends. On this course you will typically make:
- Devon crab and crayfish cocktail with avocado and parmesan cheese crisp
- Red mullet with ratatouille and a basil and green olive salsa verde
- Squid, chorizo and salmon kebabs with fresh basil and home made squid papperdelle
- Trout schnitzel style with herb breadcrumbs, cauliflower freeka and crispy chickpeas
Your lunch will be Plaice with brown shrimps and beurre noisette, herb crushed new potatoes and spinach princess which Steph will demo and then serve you.
Steph will do a number of other demos during the day and pass on lots of excellent tips to give you the confidence to recreate all the dishes at home.
At the end of the course you will have a number of exceptional fish dishes to take home and be confident in cooking with fish in the future.
This course includes refreshments throughout the day and lunch which Steph will cook for you.
