Patisserie Masterclass (Patisserie School)
Join Charlotte Marrifield, a celebrated patisserie chef who has worked with a host of wellknown chefs including Gary Rhodes and Gordon Ramsay for this full day "hands on" course learning some of the essential techniques of the art of patisserie.
Charlotte is renowned within the patisserie world and is the owner of boutique patisserie Sugar Therapy in Harrogate She also supplies her award winning patisserie to local foodie emporiums Weetons and Fodder in Harrogate and has recently secured contracts to supply northern institution Booths and also Selfridges in London under her "Undeniably Charlotte" brand.
Working alongside Charlotte on the day you will make the following impressive patisserie to take home and share with family and friends:
• Classic French Gateau Basque
• Show stopping chocolate ginger and rhubarb roulade
• Individual raspberry and vanilla mille feuilles decorated with water icing & drizzle
• Pistachio Palmier biscuits
• Retro 1970s classic cheeese straws
Skills learned on the day will include how to make:
• Puff pastry from scratch
• Perfect sponge for a roulade
• Pate Sablee
• Creme Patisserie
• White chocolate mousse
• Compote
• Mascarpone cream
At the end of the course you will have learned the skills and gained the confidence to recreate fabulous looking and delicious tasting patisserie at home.
